Compliments to the Chef - Meet the Man Behind the Menu

Our award-winning Grafene Restaurant is a source of great pride for us. The cuisine is truly exceptional. Many of our guests are genuinely surprised and impressed by the high preparation, flavors, and presentation quality, all of which contribute to a great dining experience in a beautiful environment.


The Times has listed us as one of their '20 best wild places to eat in Britain, describing our restaurant as "a wonderfully tranquil setting for some serious fine dining". Our restaurant has also been given a prestigious double AA Rosette Award for Culinary Excellence.


Meet our head chef Simon Harrison, he has been a chef for over 18 years, starting at the young age of 15. “I fell into it really. I was a kitchen Porter and transitioned into the kitchen and loved it since then.” 

 

At Losehill House, we like to keep the menu as fresh as the produce and offer an ever-changing and exciting menu. “The daily changing menus are great. It allows you to have such creativity as any ideas that you have can become a dish whenever you want. The ability to use higher-end ingredients and prep down animals/ fish always keeps your skills fresh.”

 

We are passionate about the quality and source of all of our ingredients, and whenever possible, we source them from local Peak District businesses. This mentality has helped us earn the Peak District Environmental Quality Mark, which recognises our dedication to the Peak District and the ecosystem overall. something Simon is passionate about: 

 

“We use local suppliers as I believe you get a great service from these people. They concentrate on the one thing that they are doing and try to perfect their product which makes for amazing produce coming into our kitchen on a daily basis.”

 

But what does Simon love most about his role at Losehill? “The ability to create. No days are ever the same but you always try and improve on the day before. Also seeing people thrive and teaching chefs coming through gives a great sense of satisfaction.”

 

But what can our guests expect in the future? “We endeavor to keep pushing and hopefully achieve a third rosette. There are lots of exciting things going on and the daily rotating menu means that guests returning will see completely different and exciting dishes daily.”
