Our head chef, Simon Harrison, has put together a Hot Cross Bun recipe for you try in time for Good Friday and Easter Sunday! Give it a go…
Ingredients
300ml milk
50g butter
500g strong flour
1 tbs salt
75g caster sugar
1 tbsp oil
7g yeast
1 egg
75g sultanas
50g mixed peel
Zest 1 orange
1 Dessert Apple - peeled and chopped
1 tbsp ground cinnamon
Apricot jam to brush
75g flour - 5 tbsp water (for the cross)
How to:
Boil the milk and turn off the heat to add the butter. Stir in and allow to cool.
Mix flour, salt, sugar, yeast and oil and add to the milk mixture, mix well.
Add the egg and begin to knead before adding more flour if needed. Leave the dough wrapped in a bowl for 1 hour.
Knock the dough back and knead in all other ingredients.
Place the dough back in the bowl and cover to leave to prove for another hour.
Divide the dough into small balls (around 70-80g) and place onto a lined baking tray.
Leave to prove for another hour.
Pipe a cross over the bun with your mixture (75g flour - 5 tbsp water).
Bake at 200°C for 17-20mins
When they come out of the oven, brush with apricot jam!
